Portuguese White Bean, Kale and Linguica Soup


Ingredients:
1 lb pork and fennel sausage (linguica)
2 strips bacon, coarsely chopped

2 teaspoons extra virgin olive oil

1 large Vidalia onion, diced

4 cloves garlic, minced
1 teaspoon crushed red pepper flakes
2 1/2 cups chicken stock
1 15 oz can cannellini beans

1 28 oz can chopped tomatoes

2 cups kale


Heat up olive oil in a large saute pan over medium high heat. Add linguica and cook about 6 minutes, turning halfway through to brown both sides. Remove from pan and let cool (leave burner on).

Add onion, garlic and bacon chunks to pan. Saute for 5-7 minutes until onion is translucent. Add red pepper flakes and cook 1 additional minute.

Add tomatoes. Let mixture come to a boil, then let cook 5 minutes, stirring occasionally.

Add cannellini beans and chicken broth. When soup comes to a boil, turn down so that it remains at a simmer.

Cook uncovered about 20 minutes, until beans are soft. While cooking, slice sausage into approximately 3/4 inch long chunks.

Add sausage chunks and kale. Cook for about 10-15 minutes until soup has thickened.

Serve with
crostini (Slice Italian bread, drizzle with olive oil then grill or cook in toaster oven).

  2. Do you give me permission to make this without kale? My hubby is portugese and from experience, my kdis would eat this as long as there is no kale--none of us enjoy it. We love beans though

  6. Sounds great! I always make my grandmother's version of "Portuguese soup" and she uses chouriço. I'd love to try a different spin on it!

  8. I grew up eating Portuguese Kale Soup and absolutely love it. I've never seen a recipe exactly like another one, either... it's all up to the cook! If you care to take a look at my recipe, it's up on my blog. :)

  11. This is really fantastic - I'm going to save this ASAP! From experience, I have a hard time finding Portuguese linguica (I've found it at only one store - an Eastern European sausage/deli market) but I will make the effort for something that promises to be so delicious!

I am married to a Portuguese descendant from Hawaii and he makes his mothers version of Portuguese soup, which differs from her mothers soup and My husband makes his like his mothers, and now it is different because I suggested adding Kale to the soup and wala it is awesome!!! this recipe is by far the closest I saw yet, but, certain ingredients are missing. I will try this recipe.
